To most of us, an oyster is a morsel from heaven smiling from its open shell seducing us with promise of a great night ahead. But there is a group of people out there that see something so much more…

When Montreal restaurateur, Tim Rozon (Garde Manger) asked the question: What's the big deal with oysters? He was thrust on a journey into a magical world. From it's historical beginnings as the poor man's food, oysters have taken a radical shift in modern society. Now with many restaurants catering to an affluent crowd, oyster festivals and shucking competitions popping up all over the world, Tim is about to get his answer.

Beyond the seafood festivals and oyster bars, this "perfect food" plays a much more important role in the health of our oceans and ecosystem.
