When Montreal restaurateur, Tim Rozon (Garde Manger) asked the question: What's the big deal with oysters? He was thrust on a journey into a magical world. From it's historical beginnings as the poor man's food, oysters have taken a radical shift in modern society. Now with many restaurants catering to an affluent crowd, oyster festivals and shucking competitions popping up all over the world, Tim is about to get his answer.
Beyond the seafood festivals and oyster bars, this "perfect food" plays a much more important role in the health of our oceans and ecosystem. The most eccentric, crazy and well-known oyster shuckers and restaurateurs in the business including Rodney Clark, Patrick McMurray and Daniel Notkin help shed some light on the mysterious and fabulous world of oysters.
